Hidden tins beat fluorescent mountains
You can tell a lot from the counter. Gelato made in small batches is often kept in covered steel tins (pozzetti) or in flat trays, and it looks muted: pistachio is brownish green, banana is gray-cream. Tall swirled mountains in bright colors are usually held up with extra stabilisers and air, and bright green pistachio has colouring in it. It is fine to ask whether they make it on the premises; the good shops will tell you, and often point at the back room.
