Nothing is landed in Paris, everything comes through Rungis
Paris is a long way from the sea, and almost all of its fish arrives overnight through Rungis, the wholesale market south of the city, where restaurants and fishmongers buy before dawn. That is why the question is not where the fish is landed but how quickly a place turns its stock: a busy counter that sells out beats a grand dining room with a slow week. Oysters are eaten all year now, but the traditional season runs through the months with an R, and Christmas and New Year are the peak, when every écailler sets up a stall on the pavement.
