Your bike probably has no hand brakes
Many rental bikes in Amsterdam brake by pedalling backwards, a terugtraprem, with no hand brakes at all. Ask before you ride off, and practise stopping on a quiet street first. Dutch law does not require a helmet, but it does require working lights after dark, and holding a phone while cycling has been an offence since July 2019. On deposits, a card imprint or a cash deposit is normal; handing over a passport is not something you should agree to. Offer a card and a photo of the ID page instead, and walk on if the shop insists.
