Raw herring has been frozen first, by law
Amsterdam itself has no fishing harbour; North Sea fish reaches the city mostly via the auctions at IJmuiden and Urk. The herring you eat raw is not straight off the boat, whatever the stand says: EU food rules require fish eaten raw to be frozen first, to kill parasites. Hollandse Nieuwe, the new-season herring, is caught in early summer when the fish are fattest and goes on sale around mid June; outside the season you are eating herring from the freezer, which is fine, but not the same event.
