Dutch cheese is not always vegetarian
Much traditional Dutch cheese, Gouda included, is made with animal rennet, which strict vegetarians avoid. Cheeses made without it are often labelled vegetarisch in supermarkets, but on a café menu a cheese toastie will rarely say either way, so ask. Two other words worth knowing: vegetarisch means vegetarian and veganistisch means vegan. And a warning for the bar snack every local will offer you: bitterballen and kroketten are meat unless the menu clearly says otherwise, though meat-free versions have become common.
