Read the menu for the words etto and congelato
On Italian menus, fresh fish is often priced all'etto — per 100 grams — or marked s.q. (according to quantity), so the number beside a whole sea bass is not the price of the sea bass. Ask the weight before it goes on the grill. The other word to find is congelato or surgelato, usually flagged with an asterisk at the bottom of the menu; Italian restaurants are required to say when a product was frozen, and in a city with no harbor of its own a lot of it was. A menu with no asterisk anywhere and a long list of fish all year round deserves a question.
