The Roman dishes that look vegetarian and are not
Three of Rome's four great pastas are made with guanciale, cured pork cheek: carbonara, amatriciana and gricia. The fourth, cacio e pepe, has no meat, but Pecorino Romano is traditionally made with animal rennet, which matters to strict vegetarians. Fried fiori di zucca, the courgette flowers, are usually stuffed with mozzarella and a strip of anchovy, and the dressing on winter puntarelle is built on anchovy too. Ask for them senza alici. Artichokes, carciofi alla romana or alla giudia, are the safe classic in season.
