Dashi is the thing to ask about

Nearly every savoury Japanese dish, from miso soup to udon broth to simmered vegetables, starts with dashi, a stock usually made with katsuobushi, dried bonito flakes. A dish that looks entirely vegetable can be fish-based, and staff may not think to mention it. That is why a full list matters more than a top three here: the places on this map are ones where you do not have to ask.
