Where the concierge points people first
- L'Écume Saint-Honoré — A fishmonger first, with a few tables where you eat oysters and shellfish from the counter. The closest thing in central Paris to eating at the quay, because the stock you are looking at is the menu. (48.8659, 2.3312)
- Rech — The old-school seafood house in the 17th, now in Alain Ducasse's group. The place for a proper sit-down fish lunch in a tablecloth room rather than a platter at a bar. (48.8794, 2.2918)
- Le Bar à Huîtres — A small group of oyster brasseries, the one at Montparnasse the best known. Come for a plateau de fruits de mer, the tiered platter of oysters, prawns, whelks and crab that Parisians order for a celebration. (48.8510, 2.3458)
- Homer Lobster — Lobster rolls, several branches across the city. Quick, casual and not French at all, which is sometimes exactly the point. (48.8529, 2.3388)
- Léon de Bruxelles — The mussels-and-chips chain, Belgian in origin, dependable and good with children. Not a destination, but you will find one near most big stations. (48.8669, 2.3658)

Nothing is landed in Paris, everything comes through Rungis
Paris is a long way from the sea, and almost all of its fish arrives overnight through Rungis, the wholesale market south of the city, where restaurants and fishmongers buy before dawn. That is why the question is not where the fish is landed but how quickly a place turns its stock: a busy counter that sells out beats a grand dining room with a slow week. Oysters are eaten all year now, but the traditional season runs through the months with an R, and Christmas and New Year are the peak, when every écailler sets up a stall on the pavement.
